1. What is a Mason Dixie Biscuit?

Mason Dixie Biscuits are our signature biscuits - more fluffy than flaky to stand up to serious toppings and fillers, like our big piece of friend chicken, thick and rich sausage gravy, and awesome jams and butters. While flaky crumbly biscuits are great for accompanying family dinners as a substitute to a dinner roll, a Mason Dixie biscuit definitely needs to hold up to being the

center of attention and showcase the filler instead of crumbling around it.

2. What's the secret to a great biscuit?

A great biscuit is hard to do - even as simple as it is. The secret is in not overworking the dough and honestly touching it as little as possible - hard to do, but after you make a few thousand, you find ways.

3. Tell us about the vision behind the company.

Our vision is to bring amazing, delicious, home-style, affordable, slow on the go, biscuits to the DC market that is void of a biscuit shop, period. A Mason Dixie meal brings the neighborhood together by providing a wholesome, home-cooked, Southern comfort food option to a community hungry for food that is familiar, affordable, portable, and downright tasty! No more franchisey chicken and cow gimmicks, nothing that is made with pink slime - instead, we are bringing a bit of nostalgia that reminds us of how iconic Southern cuisine is to our American way of life.

In today’s economy, the average American has to eat on the run or at their desk and does not always have time to enjoy a sit-down meal. We also understand that it is hard to “earn a buck,” and spend it on the right food! That is why it is important to us that we provide cost-conscious food without forgoing flavor, farm-fresh ingredients, or culinary creativity. Mason Dixie believes in serving the working American a home-cooked meal in a quick and casual setting. Biscuits are iconic staples of a family meal – they are passed around a table, a treat to which everyone looks forward. We want our food options to offer that touch of home and to trigger a sense of calm and the slow-pace of a family dinner, even on the go. Our goal is to become a neighborhood staple - a go-to for modern comfort food served with a side of Southern hospitality.

 

4. How did your team come together?

It's a long story but Mo and Ayeshah have been friends for over 8 years. Jason and Mo worked together at restaurants in the past. Ayeshah and Mo went on a foodie trip to San Francisco and had an amazing breakfast sandwich that they instantly thought w2ould be better on a biscuit so put the plan into the works. They knew they needed an expert pastry chef to perfect the signature biscuit and approached Jason as he was departing his tenure at Astro Doughnuts and Fried Chicken. It was a match made in heaven - Jason with both an Executive and Pastry Chef background with a perfect biscuit recipe and Mo with a Chef and sommelier background with a killer palette and flavor understanding created the products we push today. Ayeshah is the business and backend brains of the operation - it works best Ayeshah does everything related to business so the guys can focus on the product and what they do best. It truly is the perfect partnership.
