Jacksonville sits at the northern end of Florida, and it eats more like Georgia than Miami. Southern cooking is the base: fried chicken, biscuits, collards and a barbecue tradition closer to the Carolinas than to Texas.

The St. Johns River and the Atlantic supply shrimp, oysters and mayport shrimp specifically, which local restaurants name on the menu.

The city’s own oddity is the Camel Rider — a pita sandwich of deli meats and salad dressing, brought by the Middle Eastern families who ran the city’s corner stores. It exists almost nowhere else. Riverside, Avondale and the Beaches hold most of the independent restaurants.
