Where to eat great Vegetarian
Cities and cuisines where eating vegetarian is the default rather than a substitution.
The best vegetarian eating is rarely at a vegetarian restaurant. It is in cuisines where meatless cooking is a full tradition rather than an adaptation.
South Indian food is the clearest example — dosa, idli, sambar and the thali format are vegetarian by design, not by omission, and cities with large South Asian populations serve it properly. Ethiopian food offers the same, with fasting-day platters that are entirely plant-based and built that way over centuries.
Much of the eastern Mediterranean, the Levant and southern Italy also cook vegetables as the main event. These guides cover which cities do it well, and which dishes to ask for.
